Section 70. Food Preparation

A. Outer clothing of persons preparing or serving food shall be maintained with the highest degree of cleanliness. B. When staff members are involved in food preparation or service, these persons shall thoroughly scrub their hands and wear clean fresh outer clothing before preparing or serving formula or food. C. In facilities not under the jurisdiction of the New Mexico environment department, only snacks which require no cooking shall be served. Exception: Adult day care homes.
