Section 65 Section 65.90  Holding Temperature a)         From the point of candling and grading (including transportation), all eggs designated for human consumption shall be held at a temperature not to exceed 45° F. ambient temperature after processing until they reach the retailer. b)         All shell eggs shall be kept from freezing. c)         Nest run eggs shall be held at 60° F. or less at all times, including during transportation.
