WAC 246-215-04340. Utensils, temperature measuring devices, and testing devices — Temperature measuring devices, manual warewashing (FDA Food Code 4-302.13)

(1) In manual warewashing operations, a temperature measuring device must be provided and readily accessible for frequently measuring the washing and sanitizing temperatures. (2) In hot water mechanical warewashing operations, an irreversible registering temperature indicator must be provided and readily accessible for measuring the utensil surface temperature.
