410 IAC 7-26-121 "Special process" defined

Sec. 121. "Special process" means any food preparation method, process, or procedure that requires: (1) specific food safety controls that are different from the conventional preparation of TCS foods; or (2) the use of specialized equipment where its design is normally used by a food processing plant; when the final products are reasonably likely to cause food related illness or injury without preventive and systematic food safety hazard controls, such as product testing and an approved HACCP plan.
