410 IAC 7-26-4 "Acidified foods" defined

Sec. 4. (a) "Acidified foods" means foods, other than alcoholic beverages, with a finished equilibrium pH of 4.6 or above and an aw greater than eighty-five hundredths (0.85), intentionally altered by adding an acid or acids, or acid foods, to reach a finished equilibrium pH of 4.6 or below and an aw greater than eighty-five hundredths (0.85). (b) This term does not include: (1) acid foods that contain small amounts of other foods having a pH over 4.6, but will result in a product with finished equilibrium pH that does not significantly differ from that of the predominant acid or acid food; and (2) foods that are stored, distributed, and retailed under refrigeration.
