410 IAC 7-26-129 "Variance" defined

Sec. 129. "Variance" means a written document issued by the department on demonstration of good cause by the person requesting the variance that authorizes a waiver, modification, or deviation from at least one (1) of the state rules concerning food handling machinery or sanitary standards for the operation of food establishments.
