410 IAC 7-26-199 Microwave cooking

Sec. 199. (a) Raw animal foods cooked in a microwave oven must be: (1) rotated or stirred throughout or midway during cooking to compensate for uneven distribution of heat; (2) covered to retain surface moisture; (3) heated to a temperature of at least one hundred sixty-five (165) degrees Fahrenheit, seventy-four (74) degrees Celsius, in all parts of the food; and (4) allowed to stand covered for two (2) minutes after cooking to obtain temperature equilibrium. (b) For purposes of this section, a violation of subsection (a)(3) is a P item. (c) For purposes of this section, a violation of subsection (a)(1), (a)(2), or (a)(4) is a core item.
