410 IAC 7-26-200 Plant and TCS foods cooking for hot holding

Sec. 200. (a) Plant foods and any TCS foods not included under sections 198 and 199 of this rule that are cooked for hot holding must be cooked to a temperature of one hundred thirty-five (135) degrees Fahrenheit, fifty-seven (57) degrees Celsius. (b) For purposes of this section, a violation of subsection (a) is a PF item.
